Vanilla Yoghurt (yogurt) Pancakes – Denver Photographer

I get asked about these pancakes all the time! I have found fantastic ways to hide good stuff in my daughter’s food. Pancakes being one of them, and she always asks for pancakes in the morning.

Having never measured before, I tried to this morning and found that they are pretty much a 1:1 recipe depending on how much batter you need.

  • 1 cup Aunt Jemima buttermilk just add water mix (no water added though)
  • 1 cup of low fat or no fat vanilla yoghurt (I use Rocky Mountain Yoghurt)
  • 1 TBS of ground flaxseed and almond mix
  • 1 mashed banana
  • Mix all together
  • Make pancakes like normal

Or double all of that if you need more mix.

Maya always request peanut butter on top. Protein, right? ;-) I’ve attempted, once, to make them into the shapes but those are just way too hard to use to get out of the holder to flip over. Shape holders are probably better for eggs.

Next time I’ll have to try to remember to measure my “rainbow” pancakes. Purple pancakes made with blue and black berry puree. Red pancakes with strawberry puree.

I am having a great time making Maya’s food!! It really is not as time consuming as I thought it would be. 2-3 hours one night a week and you can knock out quite the variety of purees and blends for freezing and later consumption. I am not sure what is more fun – making her food or watching her try new things! To be a little organized, I’ve dedicated Wednesdays and Sundays to introduce a new food. That helps me to remember the 3-4 day wait period for any allergic reaction.

Maya LOVES vegetables! Especially mashed up avocados. I have a very hard time getting her to eat fruit by itself so I sneak it in other places like a chicken blend. So far her food repertoire consist of sweet potatoes, pears, apples, broccoli, carrots, chicken, avocados, bananas (tried 2 or 3 times and even mashed up with breast milk she is not a fan) and now butternut squash (who knew it was so good!)

Currently I am using puree recipes from the Top 100 Baby Purees and Cooking for Baby . Everything gets frozen in these great cubed trays. Being made out of silicon makes it very easy to turn upside down and push out the frozen food. I HATE these ice cube trays. One, it is very hard to get the frozen food out and two, they obviously don’t stack very well in the plastic bags in the freezer. I didn’t think that would be an issue until I needed them to stack to utilize all the freezer space. Maya loves this blend of sauteed onions, chicken, sweet potatoes and pears that I make which I have found freezes well in these great perfect serving size cups.

So my question is, if you make your own baby food, how on earth do you organize your freezer? These zip lock bags are getting out of control! Have you found a better way?
