I get asked about these pancakes all the time! I have found fantastic ways to hide good stuff in my daughter’s food. Pancakes being one of them, and she always asks for pancakes in the morning.
Having never measured before, I tried to this morning and found that they are pretty much a 1:1 recipe depending on how much batter you need.
- 1 cup Aunt Jemima buttermilk just add water mix (no water added though)
- 1 cup of low fat or no fat vanilla yoghurt (I use Rocky Mountain Yoghurt)
- 1 TBS of ground flaxseed and almond mix
- 1 mashed banana
- Mix all together
- Make pancakes like normal
Or double all of that if you need more mix.
Maya always request peanut butter on top. Protein, right?
I’ve attempted, once, to make them into the shapes but those are just way too hard to use to get out of the holder to flip over. Shape holders are probably better for eggs.
Next time I’ll have to try to remember to measure my “rainbow” pancakes. Purple pancakes made with blue and black berry puree. Red pancakes with strawberry puree.
